A Pastrycook would need the skills and knowledge to complete the following tasks:

  • checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations;

  • checking the quality of raw materials and weighing ingredients;

  • kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods;

  • preparing pastry fillings;

  • monitoring oven temperatures and product appearance to determine baking times;

  • coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products;

  • glazing buns and pastries, and decorating cakes with cream and icing;

  • operating machines which roll and mould dough and cut biscuits;

  • emptying, cleaning and greasing baking trays, tins and other cooking equipment.

The Australian qualification for pastrycooks is FDF30510 Certificate III in Retail Baking (Cake and Pastry). To be awarded this qualification you need to demonstrate to an assessor that you have skills and knowledge to perform the range of tasks required to work as a pastrycook in Australia. These tasks and knowledge are listed in the following units of competency. To be awarded a Certificate III in Retail Baking (Cake and Pastry), you must be assessed as competent in 16 units of competency (13 core units and 3 elective units).

What’s it like to be a Pastrycook?

Pastrycooks mix, bake, fill, ice and decorate all kinds of cakes and pastries.

Pastrycooks stand for most of the day. They may work split shifts at night or
on weekends and public holidays. Pastrycooks must be prepared to start work
early in the morning. Conditions in the bakery are usually hot and humid.
